Linda: 日本人は長い間牛肉を食べなかったそうですね。
I understand that Japanese hasn't been eating beef for so long.
Yuko: 19世紀終わりまで、日本人は牛肉をほとんど食べなかったんですね。
Until the end of the 19th century, Japanese didn't eat beef or pork at all.
それは仏教の教えで４本足の動物を食べることを禁じられていたからです。
That was because Buddhist teaching forbade eating four-legged animals.
Linda: 日本では牛肉を食べるといっても、ステーキは食べないというのは本当ですか？
Is it true that even though Japanese eat beef, they don't eat much steak?
Yuko: 最近では、日本人は沢山のビーフステーキを食べますが、すき焼きやしゃぶしゃぶの方がもっと人気の牛肉料理です。
Japanese eat a lot of beefsteak these days, but sukiyaki and shabushabu are more popular beef dishes.
Linda: すき焼きとはどんな料理ですか？
What kind of dish is sukiyaki?
Yuko: すき焼きの肉はステーキのように厚くなく、紙のように薄く切った肉です。
The meat used in sukiyaki is not as thickly cut as steak; actually the meat is as thin as paper .
その肉を白菜、しいたけ、ねぎ、豆腐などの材料と一緒に煮ます。
The meat is cooked with Chinese cabbage, shiitake mushrooms, green onions, tofu and other ingredients.
Linda: 味付けはどのようにしますか？
How do you flavor it ?
Yuko: しょうゆ、砂糖、日本の米ワインである、日本酒を鍋に入れます。
You put soy sauce, sugar and sake ...that's Japanese rice wine .. into a pot.
すき焼きは温かい鍋料理なので、テーブルの上に置き、私たちの前で料理されます。
Sukiyaki is a hot, one pot dish which is often cooked in front of you on the table .
なので、すき焼きは人気の冬料理です。
So it's a popular winter dish.
Linda:しゃぶしゃぶはどんな料理ですか？
what about shabushabu?
Yuko: すき焼きと同じような牛肉を薄切りにしますが、焼きません。
You thinly slice beef as sukiyaki, but you don't grill it.
お肉といろいろな種類の野菜をスープの入った鍋に入れ、数秒間落とします。
You drop the meat and a variety of vegetables in the hot soup stock for a few seconds.
それから、しょうゆ、ごま、ピーナッツバター風味のタレに、一口サイズを付けて食べます。
Then you dip your bite-size pieces into different kinds of sauces soy sauce or , sesame-seed or even peanut-butter flavored dips.
