My Beer Got Matured Finally

【Day 107】
When I had dinner, I opened beer I brewed and realized it’s got so much matured. The foam has got creamier, its aroma has got more fruity. And its taste has become more like a pale ale, not a pilsner.
I’ve had emptied half of 30 bottles now, it means it’s been 2 more weeks since I opened the first bottle.
Now I understand why skilled homebrewers say that it’s better to wait for a month after finishing 2nd fermentation. And I’m confident enough for my 2nd batch.
I’m thinking about brewing a sort of mellow IPA, I've decided to call it “MIPA" that is exactly the same as my third daughter's nickname, which is less bitter and juicier than a west coast IPA style. I think it’s going to be similar to a New England IPA which is also known as NEIPA.
If possible, I prefer to brew it with all-grain, not using a kit beer.
I can’t wait for it.
