Sake & Kombucha Wizard

【Day 99】

I made a great connection yesterday. 

While learning about Sydney beers, I discovered Chiho, who is a Japanese brewer at Yulli's Brews. She brews Sake & kombucha for the brewery.

When I was checking Yulli's Brews' Instagram account, I found her own account on it, so I sent her the following request. A minute later, she had accepted it then I sent a message and introduced myself.

In her reply, she told me about herself like, she’s lived in Bronte Beach for 24 years, she came to Australia for her working holiday at first, she is a bodyboarder and her husband is a surfer.

She used to be a cook originally. Because of her job, she had been interested in fermented food and she started homebrewing.

She made various types of fermented drinks such as beer, sake, kombucha. One day, she'd got a chance to share her sake with the owner of Yulli's Brews, and he had loved it seriously, so he asked her to brew for his brewery. That's the beginning of her new journey. It's only 2 years ago. She is now called “Sake & kombucha wizard” on the Yulli's website.

“Sake IPA”, It’s a unique style, isn’t it?

I think that’s a really interesting story. And I feel like we’re like-minded people. 

Additionally, when I told her that before moving over from Japan we stayed at an Airbnb listing in Bronte Beach, she told me a quite surprising thing. The host of Airbnb where we stayed at is a classmate's family of her son.

What a coincidence! The world is so small.
