かまわぬの手ぬぐい（ぶどう）

 
9月。ぶどうの収穫が始まります。ふどうの収穫はタイミングが命。酸味、糖度、風味、タンニンなどのバランスをみて生産者がベストなタイミングを見計らって収穫します。日本は雨が多いので、日本の生産者は雨を避けて収穫に臨みます。雨によって収穫前のぶどうが病気にかかったり水分が増えて風味が損なわれる恐れがあるため、特にこの時期は天候に気を払っています。

In September, the harvesting gets started. It’s important to judge the timing of harvesting grapes. Growers decide the day of harvest considering the balance of acidity, sugar, flavor, and tannin. In Japan, we have heavy rain in Fall, growers take care of the weather seriously. Rain makes grapes rot and disease, or grapes loses its flavor.
