イタリアの菓子パン「マリトッツオ」/Maritozzo

今巷で人気のマリトッツオを作ります。
自分で作ると甘さを調節できるし、なにより余計な添加物が入りません。冷凍保存できるのも魅力的。
Let's make Maritozzo which is now getting popular in Japan.
A bread that is sold outside is always too sweet for me and also using food additives.
Good points of handmade are that it's easy to adjust the sweetness as well as it is possible to use high-quality ingredients.
English follows Japanese.

<材料> 8個分
ブリオッシュの生地
100%Hokkaido(強力粉) 250g(①50g、②200g)
ドライイースト      3g(①1.5g、②1.5g)
牛乳          125ml(①50g、②75g)
洗双糖          35g
塩            1.5g
卵            1個
発酵バター        40g(キューブ状にカットし冷蔵庫で保存)
ドライオレンジ      14g(またはオレンジの皮1/4個分)

中のフィリング
生クリーム(乳脂肪47%) 200ml
洗双糖          大匙3
ラム酒          少々

1. ボウルに小麦粉50g(上記分量の20%)、人肌程度に温めた牛乳50㎖(上記分量の40%)、ドライイースト1.5g(小匙1/2程度、上記分量の1/2)を入れ、フォークなどを使って滑らかになるまで混ぜる。ラップをして温かい場所で1時間程度、生地が倍になるまで発酵させる。(発酵種作り)
2. 2倍程度に膨らんだ発酵種と残りの小麦粉200g、牛乳75ml、イースト1.5g、溶き卵(パンを焼くときの艶出しに使う大匙1程度を別に取っておく)、洗双糖、塩を合わせて手でよく捏ねる。
3. 生地がまとまってきたらキューブ状にカットした発酵バターを加えて捏ねる。
4. 発酵バターが馴染んだら、細かく刻んでおいたドライオレンジ(またはオレンジの皮のすりおろし)を加えて捏ねる。
10分程度こねているとまとまってくるので、丸く成型してボウルに入れラップをかけて発酵させる。
5. 二倍くらいに膨らみ、また粉を付けた指をさしてみて生地が戻ってこなければOK。生地を60gずつに分けて丸くお団子状に丸める
6. オーブンシートを敷いた天板に間隔をあけて並べ、30分ほど温かい場所で二倍の大きさになるまで発酵させる。
7. 残しておいた卵液をパン生地に塗って、190度に予熱したオーブンで、15分焼く。
8. 生クリームに洗双糖、ラム酒を加えて、しっかりと泡立てる
9. パンがよく冷めたら切り目を入れて泡立てた生クリームをつめる。切れ目にクリームをあふれるようにたっぷりと詰める。

<Ingredients> 8 pieces
Dough of Brioche
250g(①50g、②200g)  Bread flour100%Hokkaido(強力粉)
3g(①1.5g、②1.5g)      Yeast      
125ml(①50g、②75g)         Milk
35g                                             Light brown sugar          
1.5g                                            Salt            
1                                                 Egg
40g                                             Fermented butter
14g                                             Dried Orange peel 

Filling
200ml                                        Fresh cream(Milk fat is over 47%)  
3 Tbsp           Light brown sugar 
Proper amount                          Rum

1. Put 50g flour, 50ml warm (body temperature) milk as same as, and 1.5g yeast in the bowl. Mix them with a fork until they become smooth.
Wrap the bowl with plastic wrap and leave it for an hour until the dough becomes double size.(Make Leaven)
2. Add 200g flour, 75ml milk, 1.5g yeast, beaten egg (except 1Tbsp), Light brown sugar, and salt, then knead them well.
3. When the dough comes together, add the fermented butter cut into cubes and knead.
4. When the fermented butter is familiar to the dough, add finely chopped dry orange (or grated orange peel) and knead more.
When it comes together, shape it into a round shape, put it in a bowl, wrap it and leave it again until the dough becomes double size.
5. If the dough does not come back when you stick your powdered finger, it's enough.
Divide the dough into 60g pieces and roll them into a dumpling.
6. Arrange them on the parchment paper at intervals, and ferment them in a warm place for about 30 minutes until they are twice as large.
7. Apply the remaining egg liquid to the bread dough and bake in an oven preheated to 190 degrees for 15 minutes.
8. Add sugar and rum to fresh cream and whisk well.
9. When the bread has cooled well, make a cut and fill it with whipped cream. Fill with plenty of creams so that it overflows.
