Day 311: Shime Saba

Matsuwa is a local small town in the southern part of Tokyo bay.




It is famous with the catch of Saba, or mackerel, with juicy fatty but firm flesh.


Sashimi Saba needs to be eaten sooner as this fish could not be stored as well and long as the other types of fish
And that makes Matsuwa Saba as rare ones, and the brand value becomes elavated.

Yes, I'm a Saba manic, and I could get Matsuwa Saba with reasonable price.
Saba is very good by marinading with vinegar.

It surely went well with Sake.
