Day 210 : Dried Fish

This is the globally common way to preserve fish.
And this can enlarge the taste of fish, by drying fish to condense Umami.

It seems very onerous to do, but if you give it a try, that's not difficult at all.
Just get rid of entrails, put the fish into salted water (as salty as sea water) for an hour, then dry it outside for half a day or one day long.

That's it. Easy huh?

And it tastes very good because it's fresh, and its Umami is enlarged, and of course it's what you've just made by yourself.




I dried a right-eyed flounder.

By the way, English doesn't differentiate カレイ and ヒラメ, so I dried a right-eyed founder....
