* Ingredients
Flour ; 春よ恋 / 平和製粉株式会社 - 250g
Salt ; 伯方の塩 あら塩 - 3 g
Starter ; starter A which was fed on Jan.19 - 100 g
Warm milk - 140 g
Sugar - 20g
Melted butter - 20 g
* Mixed ingredients without butter ( 3-5 min)
* Mixed with butter and knead 15 min (eri)
* First rising time ; 3 hours ( 6:30 - 9:30p.m.)
* Divide the dough into 8
* Beat the air out & Fold the dough
* Second rising time ; 9 hours ( 10:00 p.m. - 7:00 a.m.) @fridge
* Brush with beaten egg before baking to glaze the surface

Jan. 21 2021 7:00 - 7:12 a.m.
Apparatus ; Panasonic NE-BS807
Preheat @ 180 C
Duration time ; 12 min with steam
