Sourdough Diary #15 Cinnamon roll

Feed                 Feb. 17 2021 7:30 p.m. / RT ; 22 -25 C / RH ; around 40%
* Ingredients
Sourdough starter                      - 50 g
Water ; Brita + T-fal                    - 60 g
Flour ; Bob's Red Mill unbleached white All-purpose Organic Flour - 60 g

Knead
               Feb.17 2021 8:00 p.m. / RT ; ND, RH ; ND
* Ingredients
Flour ; はるゆたかブレンド / 江別製粉  - 300g
Egg                     - 1 Pc
Salt ; 伯方の塩 あら塩             - 5 g
Bubbly active Sourdough Starter         - 100 g
Granulated sugar                                       - 20 g
Melted unsalted butter                              - 28 g
Warm milk                                                  - 160 g

Bulk rising  ; 8 hours (9:00 p.m.- 5:00 a.m.) @ RT (around 16C)

Cinnamon-Sugar Filling        Feb. 18, 2021 5:00a.m. 
 * Ingredients
    Sugar                          - 60g
    Cinnamon powder      - 3 tsp
    Flour                           - 8g 
    Melted butter             - 20 g
Rest time ; 2 hours (5:30-7:30 a.m.)

Baking           Feb. 18, 2021 7:30 - 8:00 p.m.
Apparatus ; Panasonic NE-BS807
Condition ;  170C 30 min with steam

Feedback

- Very good rising
- Very good taste
- The surface was a little bit hard. ==> less baking time, or temperature is needed
