お惣菜パンの基本生地/Basic Dough for Japanese Savory Buns

お惣菜パンの基本生地
材料:6個分
*小麦粉(強力粉か中力粉) 250g
*砂糖 大さじ1(うち小さじ1杯分はイースト用)
*塩 小さじ1
*ドライイースト 小さじ1
*ぬるま湯 50g
*牛乳(40℃くらいに温めた)100g
*溶き卵 1つ(半分はエッグウォッシュ用)
1.小さな器にぬるま湯を入れ、小さじ1杯分の砂糖とイーストをよく混ぜ合わせて置く。
2.大きなボールに、小麦粉、砂糖(残りの砂糖、小さじ2杯分)、塩を入れよく混ぜる。
3.2のボールに1,溶き卵半個分、牛乳を入れ、ある程度まとまるまで、木べらの柄の後ろ側などで混ぜる。ある程度まとまったら、45分ほど蓋をして発酵が進むのを待つ。生地が発酵して膨らんだら、捏ねる、また45分待って捏ねるを3回くらい繰り返します。こうする事で、手ごね作業は楽にできる。ブレッドマシーンを使ってもOK。
4.捏ねたパンの形を整え、6等分になる様に切り分け、更に軽く捏ね、ボール状にして、ラップをかけてベンチタイム。ここまでが基本生地の扱い方です。

Basic dough for Japanese Savory Buns
ingredients : 6 pieces
* Wheat flour (strong flour or medium-strength flour) 250 g
* 1 tablespoon sugar (1 teaspoon for yeast)
* 1 teaspoon of salt
* 1 teaspoon of dry yeast
* Warm water 50g
* 100g of milk (warmed to about 40 ℃)
* One beaten egg (half for egg wash)
1. Put lukewarm water in a small bowl and mix well with a teaspoon of sugar and yeast.
2. In a large bowl, add flour, sugar (remaining sugar, 2 teaspoons) and salt and mix well.
3. Put 1/2 of the beaten egg ,milk and yeast mixture in the large bowl with flour mixture. Then mix it on the back of the wooden spoon handle until it is gathered. When it is settled and combined, cover it for about 45 minutes and wait for it to rise. When the dough is raised, knead it. Again wait 45 minutes and knead. Then repeat that again one more time. By doing this, the manual work can be done easily. You can also use a bread machine.
4. Shape the kneaded dough, cut it into 6 equal parts, knead it lightly, make it into a ball shape, wrap it and bench time about 10 to 15minutes.
