Sawara Series #02
I recently had the chance to try two delicious kinds of sake at the Fermentation Summit in Sawara. If you ever visit the Tokyo area, I highly recommend trying these local sakes. One of them, Daigonjo, Kano, was served chilled with a little ice, and the taste was smooth and refreshing. I think the autumn sun outside made the experience even better, and I was able to enjoy each sake in its own unique way. Below, I’ll share some details about each sake. I hope you find it helpful!
Doburoku Sake (600ml):
• Comes in a clear bottle with a white label.
• Has an alcohol content of 5%, which is quite low for sake.
• Its sweet and sour taste is very pleasant, and I’m sure you’ll like it once you try it.
• Made with naturally fermented yeast, it has a fresh flavor.
• Best enjoyed chilled from the fridge!
Daiginjo, Kano (720ml):
• Comes in a black bottle.
• Has won 17 gold medals at the National New Sake Competition in Japan.
• The flavor, aroma, and balance of this sake are excellent, making it almost like a work of art.
• The taste is light yet mellow, perfect to drink either chilled or at room temperature.
• Alcohol content: 17%.
• Made from 100% Yamadanishiki rice with a polishing ratio of 35%.

I hope this gives you an idea of how wonderful these sakes are!
